My daughters favorite spud.
Bacon Cheese Mushroom Spud
Serves one
Large baked potato
2 slices crisp bacon chopped
3 b*tton mushrooms sliced (may use canned or saute in b*tter if desired)
1/4 c. Cheddar Cheese grated
1/4 c Sour Cream
Split Hot baked Potato (mash sides to open and break up the potato. Add above ingredients and enjoy.

Broccoli Cheese Spud
1 large baked potato
1/2 cup broccoli steamed til tender
1/4 c shredded Cheese Sharp Cheddar or Colby
1/2 c. Cheese Sauce (2 T. Cheese Whiz or Diced Velveta cheese product melt and thin with small amt milk about 1/4 cup. If your cheese sauce is too thick add little more milk til desired consistancy)
Drain broccoli add melted cheese sauce. Stir gently to coat vege. Split hot baked potato open and press sides to break potato up some. *

Pour cheesy broccoli mix over baked potato top with shredded Cheese. Sprinkle with few chopped chives if desired. Serve and enjoy.
